#FamilyKitchen: Check Out How to Prepare This Delicious Akwa Ibom Soup
Ekpang Nkwukwo is made with grated Cocoyam, water yam, cocoyam leaves and periwinkles. This delicious soup is nutritious and also very tasty.
Here are the ingredients:
*250g Water Yam (Optional)
*A big bunch of tender cocoyam leaves
*Pumpkin leaves and
*Scent leaves (nchanwu, efinrin)
*Palm oil: a generous quantity
*A handful crayfish
*3 medium onions
*2 milk cups (300g shelled or 500g unshelled) Periwinkles
*Assorted Beef & Offal
*Pepper & Salt to taste
*Boil the beef and offal with the dry fish, make sure you add seasoning and salt while boiling.
*Rub plenty amount of Red oil in the pot to be used in cooking the soup
*After washing, cut the cocoyam into medium pieces and if you are using Ugwu leaves, just wash and set aside.
*Wash and afterward cut the scent leaves into small or tiny pieces.
*Wash well the periwinkles whether shelled or unshelled
*Blend the pepper with crayfish and keep
How to cook Ekpang Nkwukwo:
a. If you are using unshelled periwinkles, place them inside the oiled pot first
b. Put a bit of the grated cocoyam into the cocoyam leave that has been cut into medium size or one pumpkin leaf. Repeat this process until all grated cocoyam is finished.
c. Put all the wraps into the pot.
d. Add pepper, crayfish, assorted beef, shelled periwinkles and onions.
e. Pour hot water to the level of the content in the pot and allow to cook for 20 minutes.
f. Add scent leaves, plenty amount of red oil and salt to taste. Leave to cook for another 5 minutes.
g. Remove from heat and allow to cool for 5 minutes, stir all together and your Ekpang Nkwukwo.
