Dailyfamily.ng is presenting you this weekend, a new way of enjoying your favorite pepper soup delicacy which is known as Plantain Chicken Pepper Soup.
Chicken pepper soup prepared with unripe plantain is very nutritious and easy to prepare which is sure to become your family’s favorite after the first taste.
*Slightly ripe plantain (or unripe)
*Few Slices of Yam
*1 large onion
*Minced ginger and garlic
*Scotch Bonnet (Ata rodo), sliced thinly or use ground pepper
*Pepper soup spice/seasoning
*Dry or Fresh mint leaves
*Seasoning cubes (Maggi or Knorr)
*Salt to taste
How to prepare:
-Cut the yam into bite chunks and wash, Cut the plantain into 4 or 5 pieces and set both aside
-Wash and Chop the full chicken into small sizes (preferred size), put in a pot and add onion, ginger, garlic, seasoning cubes and salt to taste, put on low heat and allow to simmer for at least 10 minutes.
-Add Plantain and Yam
-Add pepper and pepper soup seasoning
-Stir all together and allow to cook for about 20 minutes until the yam, plantain and chicken are almost soft.
-Add plenty of water that will cover the contents in the pot, add the mint leaves. Check seasoning and salt taste.
-Allow to cook until the chicken, yam and plantain becomes tender
Your Plantain Chicken Pepper Soup is ready to enjoy. Take while it is hot.
