How to prepare delicious Gizdodo
If you want to try something new for your family this coming weekend, you can try cooking delicious Gizdodo. Gizdodo is a combination of chicken, turkey or duck gizzards and plantain. You should be careful not to make use of overly ripe plantain so the meal will not become messy when served.
- Gizdodo ingredients
500 grams, chicken gizzards
1 ripe plantain
3 large roma tomatoes (fresh tomatoes)
2 habenero pepper (atarodo)
1 red ball pepper (tatashe)
1 teaspoonful ground crayfish(optional)
1 large onion bulb (cut into two halves)
1 garlic clove/half teaspoon garlic powder optional
Half teaspoon each of curry and thyme 2 bouillon/stock cubes
Vegetable oil(enough for frying)
- To garnish it, you will need:
1 green bell pepper (chopped into tiny cubes)
1 red bell pepper (chopped into tiny cubes)
1 small red onions (chopped into tiny cubes)
How to prepare Gizdodo
Clean the gizzards well, remove the yellow lining from it. Wash the gizzards with salted water or lemon juice. After, rinse well with water and put aside. Put the gizzard in a pot and add water to a half level of the gizzards, add seasoning as desired with half onion bulb, garlic, thyme, curry and salt to taste.
Cook the gizzard well because it could be tough, cook until it’s soft and allow the stock dry with it. After this place it aside.
Cut the plantain into small sizes like cubes and fry in vegetable oil until its brown then put it in a sieve. Fry the gizzards in the same oil until brown and put it in a sieve too, you can grill the gizzards if you want instead of frying it’s a healthier option.
Chop the tomatoes and peppers and blend coarsely, heat up some oil and add chopped onions in it fry it for a bit then add crayfish (optional). Stir fry for 5 seconds then pour the blended mix into the pot and fry for about 10-15 minutes until the sour taste is lost. Add seasoning and salt to taste, cook for two minutes then set aside.
Add the fried gizzards to the sauce and cook for 1 minute to soak in the sauce, add the fried plantains, chopped onions, green and red peppers. Mix thoroughly and put off the heat and your meal is ready. The gizdodo can be eaten alone or with jollof rice, coconut rice, white rice or any other meal you desire to eat it with.
