How to prepare delicious groundnut soup

Groundnut soup is a delicious soup that is eaten in most parts of the Nigerian society. It is delicious, easy to prepare and contains nutrients for every member of the family. Here is how to prepare delicious groundnut soup:

Ingredients for Groundnut Soup
500g raw peeled groundnuts (peanuts)
Assorted meat and fish.
Beef or any other meats you prefer
Shaki (cow tripe)
Dry fish
Palm Oil
A small bunch of Nigerian Pumpkin leaves(ugu) or Bitterleaf, you can also make use of scent leaves as you desire.
2 tablespoons ground crayfish
Two stock cubes or seasonings you prefer
ground dry cayenne pepper to taste

Processes before cooking groundnut soup
1. Soak the stockfish and dry fish for a few minutes in hot water depending on how strong the fish is. When the fish is soft, clean it and remove the bones then separate into small sizes.

2. Roast the raw groundnuts in a pan, stirring constantly till they become brownish in color. Set aside to cool down completely then grind into a powder with a dry with your blender or grinder.

3. Wash and cut the pumpkin leaves (ugu) or any other vegetable you prefer into smaller pieces.

4. Prepare other ingredients: grind the pepper and grind the crayfish.
How to cook
1. Start cooking the shaki first with enough water in the pot as it is the toughest meat in the bunch when the shaki starts to curl, add the dry fish and stockfish.

2. When the shaki is almost done, add beef and stock cubes and cook until all the meat and fish are well done.

3. Add the crayfish, salt, and pepper, cover and cook till it boils.

4. Remove the meat and fish from the pot/container leaving the stock in the pot.

5. Add the powdered groundnuts and stir very well till there are no lumps. Reduce the heat to very low and start cooking.

6. Stir every 5 minutes and top up the water if necessary to avoid burning.

7. Cook for about 15 minutes when till a thin film of clear oil appears on the surface and add palm oil.

8. Add the beef and fish, stir and cook on low heat till it boils. For those who prefer their groundnut soup without vegetables, the soup is ready at this time.

9. If you prefer, add the vegetables, stir and leave to simmer. Stir again and it is done.

Serve your Groundnut Soup with any swallow you desire like Eba, Fufu and so on. Enjoy
