Weekend Delight: How to prepare Okazi or Ukazi soup

Ingredients for preparing Okazi (Ukazi) soup are:

  • Okazi leave (washed and chopped)
  • Cocoyam (acts as soup thickener)
  • Red palm oil
  • Meat (beef or assorted or goat meat and ponmo)
  • Dry fish or smoked fish
  • Stock fish
  • Cayenne (red) pepper- ground
  • Ground crayfish
  • Salt and seasoning

 

Before you start cooking the soup, peel the cocoyam cook until it is soft and pound in a mortar.

Wash meat, ponmo, stock fish and smoked or dry fish well.

 

Steps to cooking Okazi soup:

 

  1. Wash the meat thoroughly and put in a pot, add salt and cook for 30 minutes
  2. Add stock fish, smoked or dry fish and continue cooking for 15 minutes
  3. Add the pounded cocoyam, add pepper and the ground crayfish and cook for 10 minutes
  4. Add red palm oil and your spices and seasonings
  5. Allow soup to cook until the oil has spread all over
  6. Add the Okazi leave and allow soup to simmer for 10 minutes.

 

Your delicious Okazi (Ukazi) soup is ready. Serve hot with Pounded Yam, Garri or Amala.
